On our third day in Batanes during our Revisit Batanes Famtour together with PHILTOA Members, we visited Octagon Restaurant to witness Ivatan Cooking Demo.
Octagon Restaurant in Batanes
Unlike Kapampangan and Ilonggo cuisine, Ivatan way cooking is simple. Ivatan food normally use locally harvested ingredients since other spices are not grown and available in the province.

Being a frequent visitor of Batanes, I noticed that some of the Ivatan cuisines’ most commonly used ingredients are uvud, Pako, yellow ginger, fish, kamote and other local produce.
Ivatan Cooking Demo
During the cooking demo, the local Chef demonstrated how to prepare and cook “Uved Balls”. Similar to Meat Balls, Uved Balls also has ground pork meat but 90% of the ingredients are Ubod ng Saging.
After the quick cooking demo, we headed back to the restaurant for lunch and heres what we had on our plate:
Steamed Lobster – In Batanes, Fresh Lobsters are simply boiled with butter and salt and cut into half before it is served in plate covered with banana leaves.
Luniz – Adobo Ivatan Style
Luniz – This is the Ivatan way of cooking Adobo, Unlike the usual adobo,Luniz is not dry and its not swimming in pork fat and cooking oil.
Uved – Also called “Uvud” in Mahatao and “Tabtab” in the island of Sabtang. Uved is made from Ubod ng Saging mixed with ground meat, fish and spices like onions, garlic, salt and pepper.
Pako Salad – Fern Salad or Paco Salad is a famous dish in Batanes. Its a refreshing appetizer made from ferns using fish sauce as a normal dressing.
Yellow Rice – Any variety of rice cooked with turmeric powder which is abundant in Batanes.
Venes – A dish similar to Laing of Bicol and Southern Tagalog. This dish is cooked in coconut cream but instead of using leaves, Ivatans are using dried Gabi Stalks.
Located at Sitio Disong Barangay Kaycharianan in Basco, Octagon Restaurant serves authentic Ivatan Cuisine and other Filipino dishes. The restaurant is open even to non-guests but make sure to call for reservation. With an alfresco dining options, Octagon Restaurant is probably one of the best restaurants in Batanes today.
