H Cafe Cebu : Sooo Pinoy Food Trip na Pilipinas!

April 13, 2012 – Sooo Pinoy Food Tour Day 3 in Cebu – Previous Post : CNT Lechon Cebu.

After our Lechon Breakfast, we went straight to Harolds Hotel – one of the newest hotels in Cebu owned by Harold Go.

During our recent visit in Cebu for the Sooo Pinoy Food Tour, we visited H Cafe – a restaurant managed by Harolds Hotel. One of the recipes the Chef prepared for us is Bistek Cebuano. Bistek is a popular tagalog dish which means Beef Steak – a thin sliced beef marinated in soy sauce, calamansi, black pepper and onions.

Chef Dionesio Delos Reyes version of Bistek Cebuano is a little bit different – made using the finest tenderloin cooked to tenderness and plated with Chinese Pechay, bagoong or shrimp paste, tomato, garlic, crispy sweet potato and caramelized onions. This recipe only shows that Cebuano’s are also using bagoong in their recipes much like the people from Northern Luzon.

Chef Dionesio also served Fish Escabetche – made from Garupa fish and cooked with carrots, ginger, green and red bell pepper, spring onions layered with shrimp okoy (shrimp  fritter) and mashed sweet potato that serves as a palate cleanser and a good alternative for rice.
