New Mexican–Style New Burritos Recipe
A burrito is a Mexican and Tex-Mex cuisine dish that took form in California cuisine, consisting of a flour tortilla wrapped into a sealed cylindrical shape around various ingredients.
Green Chile Beef Burrito

A very simple yet flavorful beef and cheese burrito with green chile.
Ingredients:
- flour tortillas
- 12 oz ground beef
- 4 oz fresh or canned green chile (diced)
- ¾ cup grated Colby jack cheese
- ½ cup water
- 2 tbsp flour
- 1 tsp salt
- 1 tsp pepper.
Yield: 4-5 burritos
Time: 30 minutes
Directions:
- Cook ground beef in a skillet until fully cooked and drain excess grease. Add salt and pepper and mix thoroughly.
- Add diced green chile and mix until thoroughly combined.
- Add flour and mix until thoroughly combined.
- Add water and mix until thoroughly combined.
- Bring to a simmer until the sauce thickens (approx. 7-10 minutes).
- Spoon filling onto a warm tortilla and sprinkle cheese on top before rolling.
Traditional NM Beef and Bean Burrito

A filling, delicious burrito full to the brim with shredded beef, bean, cheese, and green chile.
Ingredients:
- flour tortillas
- 1 boneless beef chuck roast (2 pounds)
- 3 cups water
- 4 oz fresh or canned green chile (diced)
- 1 can (30 oz) refried beans
- 1 ½ cups grated Colby jack cheese
- 1/2 cup water
- 1 tsp salt
- 1 tsp pepper.
Yield: 10 burritos
Time: 6-8 hours
Directions:
- Place roast in a crockpot with 3 cups of water and cook for 5-7 hours or until tender.
- Remove roast from crockpot and shred with two forks once cool enough to work with.
- Place shredded beef in a skillet and add green chile. Mix thoroughly before adding 1/2 cup of water and mixing thoroughly.
- Bring to a simmer for 10 minutes.
- Warm refried beans in a separate skillet.
- Spread a layer of refried beans on a warmed tortilla, scoop beef filling onto the refried beans, and sprinkle cheese on top before rolling.
Note: Both recipes can be made in advance and saved in the freezer for up to 3 months.
