Penne Pasta with Mushrooms, Spinach and Three Cheeses
Ingredients
- Half pack penne pasta
- 1 cup Shitake Mushrooms, thinly sliced
- 1 bunch Spinach
- 3-4 tbsp Rock Salt for the pasta
- 1 head garlic
- Clara Ole’s Three Cheese Pasta Sauce
- Seasoning
Cooking Procedure:
- Boil water in a casserole for the pasta.
- In a pan, sauté garlic in low heat.
- Add shitake and spinach. Cook until soft, then turn off fire.
- When water is boiling, add rock salt into the water. Add in the pasta. Stir continuously so the pasta do not stick together.
- When pasta has reached al dente, turn off fire.
- Ladle 3 tablespoons of the pasta water into the mushroom and spinach sauce.
- Strain the pasta in a colander and mix into the sauce.
- Add Clara Ole’s Three Cheese Sauce and mix together.

Easy Three-Cheese and Garlic Pizza
- Frozen pizza dough
- Clara Ole’s Three Cheese Pasta Sauce
- 2 heads garlic
Preparation:
- Spread cheese onto prepared crust.
- Sprinkle with halved garlic pieces.
- Bake for 8-10 minutes or until cheese has completely melted.
- Eat while hot!

Pumpkin Risotto with Three Cheeses
Ingredients:
- 3 cups pumpkin, finely diced
- 1/2 cup extra-virgin olive oil
- 1 cup yellow onion, finely diced
- 1 Tbsp garlic, minced
- 2 cups Arborio rice
- 1 cup dry white wine
- 5-6 cups of warm vegetable stock
- 1 cup Clara Ole Three Cheese Pasta Sauce
- 1 tsp fresh basil, minced
- 4 tbsp butter, diced
Cooking Procedure:
- In a saucepan, add vegetable stock and heat over medium-low.
- Add olive oil to another saucepan, and heat over medium heat.
- Add garlic, onion, pumpkin, and cook, stirring very often, until softened and fragrant (3 minutes or so).
- Add dry rice and sauté for 1 minute to coat the rice in the oil.
- Add dry wine and stir until most of the wine has cooked into the rice.
- Ladle in about 2-3 cups of the stock, enough to cover the rice. Cook until almost all the liquid is absorbed. Stir often/
- Ladle in about 1 cup of the stock, cook, and stir until the liquid has been absorbed.
- Repeat with one more cup of the stock.
- Taste to check if it is tender already.
- Reduce heat to low and stir in, Clara Ole’s Three Cheese sauce, basil, and butter.
- Serve in bowls.
