A box of premium Ensaymadas from Baby Pat Breads and Pastries
I was woken up by a knock on my door in the early morning of 02.10.16. When I opened the door, I was faced with our helper, who told me that an Uber driver was looking for me. I sleepily headed downstairs. I had no idea why an Uber driver would want to look for me. When I got to our front door, my sleepy soul was awakened when I saw what the Uber driver was holding. He was hired to deliver a box of Baby Pat Breads and Pastries premium ensaymadas from Makati just for me!
I read the letter on the box, and learned that it was actually a birthday gift from my friend Pearl. Pearl is the passionate home baker behind the famous Baby Pat Breads and Pastries. Pearl’s love for baking initially began in the late 2012, when she discovered that her homemade ube tasted like Baguio’s famous version. Soon after, when she realized she can use her passion for baking to start a business, she established Baby Pat Breads and Pastries in Sta. Rosa, Laguna. “Pat” is from the name of her two sweet children Patricia and Patrick.
Baby Pat Breads and Pastries is a well-known brand around town (Pearl’s specialty ensaymadas was even featured by foodie icon Spanky Enriquez), and I have personally been dying to order some of my friend’s good old home-baked goodies. I sadly didn’t have the time because I was always out of town and traveling. It was a good thing Pearl remembered me on my birthday!
I headed back to my room with the slightly heavy box of six medium-sized ensaymadas. When I reached my room, I immediately opened the box, and I was awakened by the beautiful scent and sight of premium ensaymadas. Each ensaymada was wrapped in brightly colored paper wrapper that told me the flavor of each. The Classic Queso de Bola ensaymada was wrapped in white, Ube Queso de Bola in purple, Speculoos in red, Nutella in orange, Latik in yellow, and Tablea in brown.
Later that day, I indulged myself in those wonderful treats.
Classic Queso de Bola tasted of premium butter. The generously sprinkled bits of queso de bola contrasted perfectly with the slightly sweet butter.
Nutella ensaymada, on the other hand, was a creative baking creation, if I may say. I got my favorite hazelnut and chocolate spread in my favorite pastry in one.
The ensaymada covered in red paper, the Speculoos ensaymada, tasted like my favorite Cookie Butter immersed in soft dough.
I had Latik ensaymada with brewed black and unsweetened coffee. I have always loved the classic Filipino latik, and Pearl and Baby Pat Breads and Pastries were pure genius to combine this with ensaymada.
Tablea Ensaymada also complemented with my cup of coffee. The buttery soft dough with the taste of traditional chocolate matched perfectly like Yin and Yang.
I finished my last—and favorite—ensaymada flavor… Ube Queso de Bola. Pearl really is a baking genius. The creamy purple jam was really like Baguio’s best brand of ube, and even better! Each bite of the bread roll accompanied with ube was simply the best surprise birthday gift I could even ask for.
I drained the remaining brewed coffee in my cup and got another refill before wiping my hands with a napkin. I looked back at the colorful paper wraps left in the box, which now contained no ensaymadas. I finished my half-refilled cup of brewed coffee.
I smiled to myself momentarily, because eating couple of premium ensayamadas reminded me of the good old days I had as a child—where I ate sweets to my heart’s content, much to my mother’s dismay, and where I cried when didn’t get any cakes for my birthday. As very grown up adult now, I can say that I have changed a lot. I didn’t need cakes for my birthday, and I am always very busy now. But I don’t mind the change. Having the premium box of ensaymadas from a thoughtful friend was all I needed to celebrate my birthday.
I’m finally convinced, Baby Pat’s Ensaymada is the Best tasting Ensaymada in the country today! With all the amazing flavors and buttery dough, this is definitely the one to beat!
